The Juiciest Chicken Breast Recipe…I wanted to come up with a SIMPLE recipe that can be used weekly. Minimal ingredients and quick prep time were high on my priority list. So after trying many recipes, tweaking them and experimenting more, we finally have a perfect recipe to share with you. And it works every time. We have made this recipe 10 times now and feel confident this is a recipe that produces perfection every time you make it.
Tender, juicy, and flavorful chicken breasts are a healthy and easy meal to prepare with this recipe. I cook 4 pieces each time and refrigerate the 2 extra cooked breasts. It’s amazing, the chicken is still juicy and tender the next day! It’s baked, but just as good as my mom’s famous pan fried chicken.
Speaking of my Mom’s fried chicken makes my mouth water…it was one of my favorite meals growing up. We always had mashed potatoes, chicken gravy, macaroni and cheese, and delicious veggies. You see, I LOVE fried chicken, but I have to eat healthier now. This baked chicken recipe brings all the juicy flavor, but in a healthier way.
Another reason I needed a moist recipe for chicken, is that I sometimes have trouble swallowing food. I had to stop eating chicken from Kentucky Fried Chicken because it was always too dry…which reminds me of a birthday a few years ago. I wanted to have a birthday lunch at the beach, so we bought Kentucky Fried Chicken. We loaded up the SUV with our sweet Brooksley, the Westie, and headed to Kentucky Fried Chicken. Then we hurried to the beach park and as I started eating the 2nd bite, I was not able to swallow the chicken…seriously…on the second bite. That chicken was so dry, that it was still stuck in my throat at 7pm. Almost 7 hours and it had not budged. Long story short, I ended up in the Emergency Room and had to stay the night so that a surgeon could do a procedure to make it all better the following day. This is another reason I am so ecstatic about this recipe. This chicken is so moist, that I have not visited the Emergency Room not one of the 10 times I have had this chicken.
Our Juiciest Chicken Breast Recipe ingredients include the following:
- 4 Chicken Breast Bone-In with Skin
- 1 Teaspoon Kosher Salt
- 1/2 Teaspoon Fresh Ground Pepper
- 2 Tablespoons Vegetable Oil
Directions:
Begin by adjusting the oven rack to the lower middle position. Set oven at 325 degrees. Open chicken package and pat dry the skin with paper towels, then place evenly in baking pan. I use this All-Clad roasting pan because it fits larger chicken breasts and cooks evenly. Mix the salt and pepper in a small bowl. Next, on the narrow ends of the chicken skin, work fingers under skin to separate from the meat without loosening the longer sides. Make sure the skin is still attached. The goal is to create a tunnel. Now it is time to work the salt and pepper mixture into the tunnel you created till it covers all the meat.
Once the oven reaches 325 degrees, put pan in oven and cook approximately 30-45 minutes for normal sized breasts. For larger breasts, cook for an hour. Place a frying pan on the oven with 2 tablespoons of vegetable oil and let it sit on the lowest heat setting as the chicken is baking in the oven. Monitor the temperature until the thickest part of the breast reaches 160 degrees with a meat thermometer. Remove chicken from oven when the 160 temperature is reached.
Now the magic begins. we want a crispy golden skin for each breast. Put each breast with the skin side down in the frying pan on the stovetop. Raise temperature to medium high. Cook for 5 minutes. Now turn each breast on it’s side with the thickest skin face down in the pan. Balance the chicken by leaning on the side of the pan. Cook for 3 more minutes until all skin appears golden brown. Remove promptly from pan and your meal is ready.
