Our Favorite Chicken Stew
We have spent several months experimenting and trying to create our favorite chicken stew in the style of Holen Ranch in Spartanburg, SC. The caramelized onion base with a hint of cayenne are the two strategic ingredients. We hope you like it as much as we do. Also, if you try it, we hope you will leave a comment below.
1 can cream of chicken soup
1 cup whole milk
1 box bone chicken broth
1 tablespoon pepper
1 to 2 tablespoons salt (according to your taste preference)
1 tablespoon paprika
1/4 teaspoon cayenne pepper powder
1 tablespoon chicken bouillon
Our Favorite Chicken Stew: Directions
3 onions…Cut up each one at a time then pulse in the food processor (or chop by hand). Over Medium heat, melt butter in 12 inch prying pan. Add chopped onions onions…caramelize for 30 min while stirring the whole time.
Boil cut up whole bone in chicken. Bring to boil, then medium heat for 30 min. Drain chicken.
Let cool for 20 min. Debone, and get rid of skin. Put chicken meat in bowl and squeeze until all the chicken is mashed up.
In a big pot mix 1 can cream of chicken, chicken bone broth, 3 cans evaporated milk, 1 cup whole milk, 2 tablespoons fresh ground pepper, 2 tablespoon Himalayan pink salt, 1 tablespoon paprika, 1/2 teaspoon cayenne pepper, 1 tablespoon chicken bouillon and the sautéed onions. Cook on high for 5 min, then simmer 10 min. Add chicken with large spoon and simmer for 20 min. Taste and add salt to fit your taste.
Add saltine crackers crumbled in the middle of bowl when serving. Enjoy and feel the love.
